Passion fruit panna cotta
Passion fruit panna cotta is an Italian dessert made with passion fruit and cream. It has a smooth creamy and silky texture with the freshness of the passion fruit. It is typically set in individual moulds and served chilled and is a refreshing and elegant dessert perfect for any occasion
Ingredients (i)
2,5 gelatine leaves - unflavoured
200 ml milk 1,5%
300 ml heavy cream 36%
4 passion fruits - cut in half and scoop out the sees and pulp- 4 passion fruits - cut in half and scoop out the sees and pulp
80 g white sugar
1 tablespoon icing sugar
Instructions
- Prepare all ingredients according to the list above and read through the recipe before starting
- Add (i) into a bowl with cold water2,5 gelatine leaves
- Put aside for later
- Mix (i) together in a bowl200 ml milk 1,5%, 300 ml heavy cream 36%
- Take out a casserole
- Add ½ of the mixture and warm it on low heat
- Add (i)4 passion fruits, 80 g white sugar
- Stir until all has dissolved
- Remove from the heat
- Add the gelatine leaves, squeeze them first
- Stir until all has dissolved
- Strain it back to the bowl
- Pour the mix into moulds equal to the number of servings
- Put in the fridge for minimum 4 hours or until the next day
- Mix (i) together in a bowl4 passion fruits, 1 tablespoon icing sugar
- Strain it into a bowl
- Add ⅓ of the seeds in the strainer
- Adjust with some more icing sugar if needed
- Take out the panna cottas by briefly dipping the base of the moulds in hot water
- Pour the mix of passion fruit over
- Serve

Can also be made in individual dessert glasses with the mix over
