Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Preheat oven to without fan200 °C
  • Cook (i) in salted water according to the package but still al dente
    300 g penne pasta, salt
  • Heat a frying pan and add (i)
    2 tablespoons olive oil
  • Add (i) and fry and stir for 2-3 minutes
    1 red bell pepper, 1 yellow bell pepper
  • Add (i) and stir for a few minutes
    400 g courgette, 4 cloves garlic
  • Add (i) and let it simmer for 15 minutes (timer)
    800 g canned whole plum tomatoes, 3 tablespoons paprika, 100 ml water
  • Season with (i)
    salt, black pepper
  • Mix the pasta into the frying pan
  • Add (i) and stir it together
    2 chicken breasts, 2 handfuls basil
  • Transfer it to an ovenproof dish
  • Mix (i) together in a bowl
    100 g ricotta cheese, 2 tablespoons water
  • Spread it across the top of the pasta dish
  • Sprinkle (i) on top
    100 g cheddar cheese
  • Bake in the oven for 35 minutes (timer) until golden brown
  • If necessary leave them an extra few minutes under the grill to add more colour
  • Decorate (i) and serve
    basil

Notes

To improve this dish buy the chicken breasts skin-on and bone-in and debone them yourself and remove the skin
You can replace the ricotta cheese with a similar type of cheese
Alternatively use wholemeal pasta instead of white pasta
