  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Preheat oven to 200 °C
  • Heat a frying pan big enough for the final dish on medium heat and add (i)
    2 tablespoons sunflower oil
  • Add (i) and cook gently for 5 minutes (timer), until starting to brown, stirring now and then
    2 red onions, 2 cloves garlic
  • Add (i) and cook gently for 5 minutes (timer), stirring now and then
    2 aubergines, 2 red bell peppers
  • Add (i)
    1 tablespoon paprika
  • Season generously with (i)
    salt, black pepper
  • Add (i) and let it simmer for 5 minutes (timer)
    2 tablespoons balsamic vinegar, 1 tablespoon dark soy sauce, 700 g passata
  • Adjust the seasoning with (i)
    salt, black pepper
  • Turn off the heat
  • Arrange it in an ovenproof dish
  • Heat a casserole and add (i)
    500 ml milk 1,5%
  • Heat it up to a simmer
  • Turn off the heat
  • Heat a saucepan and add (i)
    50 g butter
  • Let it melt
  • Add (i) and stir for a few minutes
    50 g plain flour T55
  • Add the hot milk slowly while stirring all the time
  • Let it simmer gently for 2-3 minutes until thickened slightly, stirring constantly
  • Turn off the heat
  • Add (i) and mix it together
    80 g parmesan cheese
  • Season with (i)
    salt, black pepper
  • Arrange it on top of the ratatouille
  • Add (i) on top
    200 g goat cheese log
  • Arrange (i) on top in overlapping circles
    3 courgettes
  • Drizzle with (i)
    2 tablespoons olive oil
  • Season with (i)
    salt
  • Bake in the oven for 25 minutes (timer), or until done
  • Let it rest for 20 minutes (timer)
  • Serve

Notes

If used as a side dish it will serve the double amount of people
