This delicious summer salad features chickpeas, cherry tomatoes, fresh basil and crumbled feta cheese. It is a quick and easy dish to make and the perfect combination for a light lunch, dinner or use it as a side dish or even for a starter with some fresh bread. Take this fresh summer dish with you on picnics or any serve it together with any type of barbecues

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Mix (i) together in a bowl
    1 onions, 400 g cherry tomatoes
  • Add (i)
    3 tablespoons lemon juice, 3 tablespoons olive oil extra virgin
  • Season with (i)
    salt, black pepper
  • Heat a frying pan on medium heat
  • Add (i) and fry and stir for 3 minutes
    530 g canned chickpeas
  • Add ⅔ of it to the bowl
  • Mash up the remaining chickpeas and add as well
  • Mix everything together
  • Adjust the seasoning with (i)
    salt, black pepper
  • Decorate with (i)
    1 handful basil
  • Arrange (i) on top
    100 g feta cheese
  • Serve

Notes

To add some heat to the dish you can serve finely chopped fresh chili on the side
