Instructions
Prepare all ingredients according to the list above and read through the recipe before starting
Heat a small casserole and add (i)
2 tablespoons olive oil
Add (i) and cook gently until it has softened
1 onion
Add (i) and mix it together
3 tablespoons plain flour T55
Add (i) and bring to a simmer
200 ml dry white wine
Add (i) and cook gently for 30 minutes (timer), stirring now and then
400 ml beef broth, 4 tablespoons estragon
Season with (i)
black pepper
Add (i) and stir it together
2 tablespoons lemon juice
Add (i) and cook gently for 10 minutes, stirring now and then
200 ml heavy cream 36%
Adjust the seasoning with (i)
salt, black pepper
Serve
Notes
You can replace fresh estragon with finely chopped frozen estragonThe broth can be made from a cube if you do not have broth at handFor a more refined taste you can use chicken broth instead of beef broth
