Ingredients (i)
 

  • duck breast1 duck breast - score the skin in parallel lines right down to the meat, 1 centimeter apart
  • saltsalt - to your taste

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Take (i) out off the fridge and set aside for 30 minutes to bring the meat to room temperature

  • Score the skin in parallel lines, 0,5 to 1 centimeter apart, just down to the meat but not into it
  • Season it with (i) on the skin side and lightly on the flesh side
    salt
  • Place it, skin side down, in a large, cold sauté pan
  • Heat the pan to medium heat
  • Cook until much of the fat has rendered and the skin is golden brown, about 6-8 minutes (timer)
  • Turn it around and cook for 3-5 minutes
  • Core temperature should be minimum 58°C
  • Take it off the pan do not cover
  • Let it rest for 10 minutes (timer)
  • Cut it into fine slices
  • Serve

Notes

If you prefer it to be medium instead of pink, add a few minutes to the cooking time
