Jerusalem artichoke, also known as sunchoke or sunroot, is a type of root vegetable that belongs to the sunflower family. Despite its name, it is not related to artichokes and has a flavour similar to artichokes when cooked. Jerusalem artichokes have a knobby, irregular shape and a thin, brown skin. They have a crisp, crunchy texture and a slightly sweet and nutty flavour. They can be eaten raw or cooked, and are often used in salads, soups, stir-fries, roasted, sautéed, mashed, or used in soups and stews. Additionally, Jerusalem artichokes are a good source of dietary fiber, iron, potassium, and other nutrients.
