Limes are small, round, green citrus fruits known for their bright and tangy flavour. They are native to Southeast Asia but are now grown in tropical and subtropical regions around the world. They are a versatile and delicious fruit that adds a burst of acidity and freshness which make it a perfect companion to a wide array of ingredients and can be used in both sweet and savoury recipes.

Limes can be squeezed to make lemon juice, which is commonly used as a garnish or ingredient in cooking, baking, lemonade and cocktails. To get the most juice out of each lime, make sure they are at room temperature, then with the palm of your hand roll it forth and back a couple of times on a hard surface to help breaking down the fibers of the flesh.

The zest from the lime, the outer green peel, serves as a superb addition to a variety of culinary preparations and unlike the juice the zest contains essential oils which are not as acidic and with more flavour.
