Semi-milled white rice is rice that has undergone a partial milling process to remove the outer husk but still retains some of its bran and germ layers. This type of rice is not as refined as white rice, which is fully polished to remove all outer layers. Semi-milled white rice has a slightly chewier texture and contains more nutrients than fully polished white rice. It is often used in dishes where a slightly firmer texture is preferred, such as sushi, risotto or paella.
