One-pot orzo pasta and shrimps with tomatoes, garlic, basil, fennel seeds and marinaded feta cheese
This one-pot orzo pasta with shrimps is a delicious and flavourful dish that combines the sweetness of tomatoes, the richness of garlic, the freshness of basil, and the aromatic notes of fennel seeds. The addition of marinated feta cheese adds a creamy and salty element to the dish that complements the other flavours perfectly. It's a complete meal in one pot that is easy to make and perfect for a week night dinner or special occasion
400 g canned whole plum tomatoes, 600 ml water, 1 vegetable stock cubes
Season with (i)
salt, black pepper
Return the orzo pasta to the pan
Cover with a lid and simmer gently for 15 minutes (timer), stirring now and then
Add more water if necessary
Remove the lid and let it simmer for 1-2 minutes until you get a creamy texture
Adjust the seasoning with (i)
salt, black pepper
Add (i) and stir for a few minutes, until the shrimps are cooked and pink
400 g shrimps
Stir in (i)
1 handful basil
Decorate with some of the marinated feta cheese and serve the rest on the side

Notes
You can use fresh frozen shrimps instead of fresh, just defrost them before useWhen you have cleaned the shrimps and are left with head and shells, heat up a pan, add some olive oil and fry the head and shells for a few minutes. Then add water to cover and let it simmer for 15 minutes. Strain it and use it as a part of the added water, doing this will add much more flavour to the dish
