Potatoes boulangeres is a classic French dish which originates from the time where people in rural french villages did not have their own ovens. They therefore took the potatoes to the baker who would bake it in his bread oven after finishing his baking of bread for the day. The dish is made with thinly sliced potatoes that are baked with onions and fresh herbs, in this case with rosemary, which adds a fragrant and earthy flavour to the dish. The potatoes become tender and creamy while the top layer gets crispy and golden brown. The rosemary enhances the savoury and aromatic profile of the dish, making it a delicious and comforting side dish that pairs well with roasted meats or poultry

Ingredients (i)
 

  • potato800 g potatoes - scrub and cut into 3 millimeter thin slices
  • onion200 g onions - peel, cut in half and slice
  • rosemary2 tablespoons rosemary - leaves only, finely chop
  • vegetable broth500 ml vegetable broth
  • olive oil2 tablespoon olive oil - to drizzle with
  • saltsalt - to your taste
  • black pepperblack pepper - freshly ground from a pepper mill, to your taste

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Preheat oven to without fan200 °C
  • Prepare an ovenproof dish and brush it with oil
  • Add three layers
  • Add one layer of (i)
    800 g potatoes, 2 tablespoons rosemary
  • Keep the best looking slices for the top layer
  • Add one layer of (i)
    200 g onions, 2 tablespoons rosemary
  • Add one layer of (i)
    800 g potatoes, 2 tablespoons rosemary
  • Season with (i)
    salt, black pepper
  • Add (i)
    500 ml vegetable broth
  • Drizzle with (i)
    2 tablespoon olive oil
  • Bake in the oven for 75 minutes (timer) until golden brown
  • Serve

Notes

You can use a mandolin to slice the potatoes 
Be careful with adding salt since the dish might only need very little or none at all
