Rule 2 : Read the recipe, the whole text

The most important advice about cooking is this one :

Read your recipe through before starting

This may seem obvious but unnecessary for some. However, taking the time to do so can save you a lot of headaches

Rule 3 : Always use a sharp knife

Basically you only need one good sharp chef’s knife. Keep it sharp using a sharpening steel for knives. Remember a dull knife is more likely to slip and cut you than a sharp one

Rule 4 : Be creative, use what you have

If you are missing some ingredients or you have some leftovers, try to imagine how that might taste if you replace some of the ingredients. You might be surprised and end up with an even better dish, so don’t be afraid of replacing ingredients, just try it out

Rule 5 : Use high quality and ecological ingredients and avoid UPF products if possible

Choosing high quality ingredients for your cooking and at the same time trying to avoid UPF (Ultra Processed Food) products which can dramatically improve the flavour of your dishes. Additionally, this can also have a positive impact on your health and wellbeing as well as on the environment

Rule 6 : Taste as you go and learn the art of properly seasoning of your food

The secret of why dishes in good restaurants taste so much better than what you make at home : the right level of seasoning and higher quality ingredients.

The secret ingredient is patience and tasting the dish often and adjusting the seasoning accordingly to get the perfect balance of salt and other flavours

Rule 7 : Always use lots !

For certain ingredients it is almost like “the more you use the better”, some ingredients just keep giving.

Onions and garlic are one example, especially if you cook it for longer time then you will get a deeper flavour to the dish. In addition, fat and olive oil should not be seen as merely extra calories to be consumed, but rather as added flavours that can make a huge difference in the final dish. For example, using quality butter as well as a good quality olive oil to drizzle on top of a pasta or fish dish, can give the meal a truly exceptional taste. Just remember that olive oil should not be cooked on high heat, since it can cause a burned taste. Sunflower and grapeseed oil have higher smoke points, so consider using those instead of olive oil if cooking at a high temperature

Rule 8 : Safety precautions

It is important to respect certain rules when preparing food :

It is best to eat cooked foods while they are still hot

Store food properly

Reheat cooked food thoroughly

Remain mindful of ensuring that there is no contact between raw and cooked food

Wash your hands frequently

Maintain the cleanliness of your kitchen

Rule 9 : Our recipes are not “modified” to look good in terms of calories or nutrition

The recipes on Nielsen Good Food have not been altered to appear on the calorie and nutrition charts. They have been composed to emphasise the good taste while still remaining healthy.

When a dish is labeled as Veggie-ready, it means that the recipe can be easily modified to suit your dietary preferences, whether you are vegetarian, vegan, or just looking for a new way to add more plant-based meals to your diet. All you have to do is make a few simple tweaks to the ingredients and you’re good to go
