This deliciously textured sauce is made from a combination of onions, potatoes and tomatoes. All of the vegetables are roughly blended together. The carefully crafted composition of these vegetables creates a unique taste that can be enjoyed as an accompaniment to other dishes

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Heat a small casserole and add (i)
    2 tablespoons olive oil
  • Add (i) and cook gently until it has softened
    2 onions, 6 cloves garlic
  • Add (i) and bring to a simmer
    300 g potatoes, 400 g canned whole plum tomatoes, 200 ml water
  • Season with (i)
    salt, black pepper
  • Simmer for 25 minutes (timer)
  • Stir regularly
  • Remove from the heat and let it cool a bit
  • Blend it with a hand blender until you obtain a smooth but still rustic texture
  • Adjust the seasoning with (i)
    salt, black pepper
  • Heat slowly
  • Serve

Notes

You can add a bit more water if too thick for your taste
