Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Bring a large pot of water to the boil
  • Cook (i) in salted water according to the package but still al dente
    400 g spaghetti pasta, salt
  • Drain off the water
  • Put aside for later
  • At the same time
  • Heat a frying pan big enough for the final dish on medium heat and add (i)
    40 ml olive oil
  • Add (i) and cook gently on medium heat for 20 minutes (timer) until it has become very soft, stirring now and then
    600 g courgette, 2 cloves garlic, 2 teaspoon rosemary, 0,5 piece lemon zest
  • Lower the temperature to a minimum
  • Stir in (i)
    80 g mascarpone cheese, 40 g pecorino romano cheese
  • Season with (i)
    salt
  • Season generously with (i)
    black pepper
  • Add the cooked pasta
  • Stir it all together thoroughly
  • Sprinkle with (i)
    10 g pecorino romano cheese, black pepper
  • Serve immediately

Notes

To add some heat to the dish you can add some chili flakes together with the rosemary
