Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Heat a large sauté pan on medium heat and add (i)
    1 tablespoon olive oil
  • Add (i) and sauté until softened and clear
    1 red onion
  • Add (i) and stir for 30 seconds
    4 cloves garlic, 2 teaspoon smoked paprika, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 2 tablespoons tomato paste
  • Add (i) and let it simmer until it has the right thickness, about 20 minutes (timer), stirring now and then
    800 g canned whole plum tomatoes, 795 g canned chickpeas, 240 ml water
  • Season generously with (i)
    salt, black pepper
  • Lower the temperature to a minimum
  • Add (i) and cook gently until it has collapsed, stirring now and then
    200 g spinach
  • Adjust the seasoning with (i)
    salt, black pepper
  • Serve

Can be garnished with fresh herbs
