Ingredients (i)
 

  • pork spiringue roast1400 g pork spiringue roast - take out of the fridge well before using, should be at room temperature
  • garlic4 cloves garlic - peel and finely grate
  • rosemary2 tablespoons rosemary - leaves only, finely chop
  • olive oil6 tablespoons olive oil
  • saltsalt - to your taste
  • black pepperblack pepper - freshly ground from a pepper mill, to your taste

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Preheat oven to 180 °C
  • Add (i) into a bowl
    4 cloves garlic, 2 tablespoons rosemary, 6 tablespoons olive oil
  • Season with (i)
    salt, black pepper
  • Mix everything together
  • Add the mixture on top of (i)
    1400 g pork spiringue roast
  • Transfer it to an ovenproof dish
  • Bake in the oven until the core temperature is 55°C, around 60 minutes (timer)
  • If necessary leave them an extra few minutes under the grill to add more colour
  • Take it out of the oven
  • Let it rest for 10 minutes (timer) and the core temperature will rice to 60°C
  • Serve

Notes

Always monitor the core temperature when you roast pork to ensure that it's cooked to perfection
