Aloo Gobi is a traditional and popular vegetarian dish from India. It consists of potatoes (Aloo) and cauliflower (Gobi) cooked together with a blend of onions, tomatoes, coriander and various spices. The dish is rich in flavour and has a perfect balance of textures with the soft potatoes and the slightly crunchy cauliflower. It is typically enjoyed with rice or flatbread. Aloo Gobi is a comforting and satisfying dish that is perfect for a hearty meal

Ingredients (i)
 

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Heat a sauté pan on medium heat and add (i)
    3 tablespoon sunflower oil
  • Add (i) and cook until they sizzle
    0,5 teaspoon cumin seeds
  • Add (i) and sauté for 30 seconds
    1,5 teaspoon ginger roots, 3 cloves garlic
  • Add (i) and fry and stir until transparent
    1 onion
  • Add (i) and fry and stir on medium heat until softened starting to getting browned, about 10 minutes (timer)
    350 g potatoes, 1 cauliflower
  • Add (i) and cook until it has softened, about 2 minutes, stirring now and then
    2 tomatoes
  • Add (i) and stir for a few minutes
    0,5 teaspoon turmeric powder, 0,5 teaspoon white wine vinegar, 1 teaspoon ground coriander
  • Add (i) and cook gently for around 6 minutes (timer), until the potatoes and cauliflower are tender, stirring now and then
    0,5 teaspoon garam masala powder, 2 tablespoons coriander, 2 tablespoons water
  • Add eventually some water if necessary, 1 tablespoon at at time
  • Adjust the seasoning with (i)
    salt, black pepper
  • Decorate (i) and serve
    coriander

Notes

You can adjust the heat by adding chili powder to your liking
You can use any neutral cooking oil you have
