The cherry tomatoes are roasted in the oven until tender and juicy, then combined with raw sweet onions, tender basil leaves, and a light flavourful apple cider vinegar dressing. The bright colours and sharp flavours of all these ingredients create a healthy pleasant dish which can both be served as a side dish or a starter

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Preheat oven to 160 °C
  • Prepare a baking tray with baking paper
  • Add (i)
    600 g cherry tomatoes
  • Bake in the oven for 60 minutes (timer) until they have collapsed
  • Arrange them on a serving dish
  • Mix (i) together in a bowl
    5 tablespoons apple cider vinegar, 3 tablespoons light honey, 2 tablespoons olive oil extra virgin
  • Season with (i)
    salt, black pepper
  • Drizzle it over the dish
  • Arrange (i) on top
    1 sweet onion
  • Decorate with (i)
    1 handful basil
  • Serve
