Braised short ribs with onion, garlic, coffee and red wine
The short ribs are braised for hours in red wine and coffee until they are so tender that they just fall off the bone. This dish has a rich in flavour which will surprise you
black pepper - freshly ground from a pepper mill, to your taste
Instructions
Prepare all ingredients according to the list above and read through the recipe before starting
Heat a Dutch oven and add (i)
2 tablespoons sunflower oil
Add (i) in batches and brown for 6 minutes (timer) on each of the 4 sides until crusty browned
1 kg short ribs
Remove the short ribs and let the Dutch oven cool down a bit
Add (i) and cook gently until it has softened
2 onions, 4 cloves garlic
Stir in (i) to deglaze the pan, to release all the flavours
350 ml dry red wine
Bring to a simmer in order for the alcohol to vaporise
Add (i)
350 ml strong coffee
Season gently with (i)
salt, black pepper
Return the ribs to the Dutch oven with the lid on
Bring to a simmer and let it simmer very gently for several hours, turning them over each hour
Season gently with (i)
salt, black pepper

Short ribs is know under a variety of names but can be recognised by being shorter and has flatter ribs compared to the back ribs which are longer and curvedOptionally you can decorate with some parsleyUse the "jus" as sauce
