This easy one-pot dish consisting of chicken thigh fillets with curry, basmati rice, onion, garlic, broccoli, and spinach is a flavourful and comforting dish that can be prepared in no time. The tender chicken thighs are cooked in a fragrant curry sauce along with the aromatic onions and garlic. The basmati rice absorbs all the delicious flavours of the curry, creating a satisfying and complete meal in one pot. Ingredients (i)
 

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Heat a large sauté pan with a lid on medium heat and add (i)
    2 tablespoon sunflower oil
  • Add (i) and fry and stir on high heat until softened, 6-8 minutes (timer)
    2 onions
  • Add (i) and fry until getting coloured, about 5-6 minutes (timer)
    5 chicken thigh fillets
  • Add (i) and cook and stir for 1 minute
    4 teaspoons curry powder, 260 g basmati rice, 4 cloves garlic
  • Add (i) and mix it together
    700 ml water, 1 chicken stock cube
  • Bring to a simmer and let it simmer for 10 minutes (timer) with the lid on
  • Stir in (i)
    500 g broccoli
  • Season with (i)
    black pepper, salt
  • Add (i) on top
    200 g baby spinach
  • Stir everything together
  • Cover with a lid and simmer gently for 10 minutes (timer), stirring now and then
  • Make sure the rice is cooked
  • Add more water if necessary
  • Adjust the seasoning with (i)
    salt, black pepper
  • Serve

Notes

To improve this dish buy the chicken thigh skin-on and bone-in and debone them yourself and remove the skin
