Flattened chicken breast with Parma ham, parmesan cheese and fresh estragon
This fantastic chicken dish, prepared with a succulent chicken breast covered with Parma ham, parmesan cheese and garnished with fresh estragon, is guaranteed to be a hit at the dinner table
Prepare all ingredients according to the list above and read through the recipe before starting
Place a piece of cling film on your kitchen countertop, one for each portion
Add (i) on top
2 chicken breasts
Add (i) on top
50 g parmesan cheese
Add (i) on top
1 handful estragon
Add (i) on top
120 g Parma ham
Place a piece of cling film on top of each
Flatten each with your hand until it is half the height
Heat a frying pan on high heat and add (i)
2 tablespoons olive oil, 15 g butter
Remove the top cling film and discard it
Put that side down on the frying pan
One at a time
Remove the bottom cling film right away
Fry on both sides for around 4 minutes

Notes
To improve this dish buy the chicken breasts skin-on and bone-in and debone them yourself and remove the skin if not part of the dishShould you not be comfortable with the cling film at the bottom then you can replace it with baking paper
