Hasselback potatoes are an impressive and delicious potato dish. The thinly sliced potatoes, baked to the crispy and crunchy perfection that everybody loves. Originates from a Swedish restaurant from where it got its name. However it might actually originate from the "Prinsessornas kokbok" a cookbook from 1029 by Jenny Åkerström

Ingredients (i)
 

  • potato1000 g potatoes - peel and cut into thin slices of a few millimetres. Beware to stop just short of cutting all the way through
  • olive oil2 tablespoons olive oil
  • saltsalt - to your taste

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Preheat oven to 200 °C
  • Put (i) into an ovenproof dish, cut-side up
    1000 g potatoes
  • Brush with (i)
    2 tablespoons olive oil
  • Season with (i)
    salt
  • Bake in the oven for 60 minutes (timer), or until done and golden brown
  • If necessary leave them an extra few minutes under the grill to add more colour
  • Serve

Notes

To keep the potatoes crispy, peel them and leave them in the ovenproof dish
