Caper berries are the fruit that a caper bush produces and much larger than capers, about the size of a cocktail olive. If the flowers don’t get picked, they will then turn into caper berries, so they are picked at later stages of their development and are picked with the stems left on. Depending on how long you wait, you may get an entirely different flavour! If berries are not picked they turn ripe, bright pink and finally burst open, revealing their seeds. They are are delicious for antipasto or as a cocktail garnish.
