This delicious aubergine dish is simple to prepare and the combination of garlic and spring onions makes it a very tasty dish

Instructions

  • Prepare all ingredients according to the list above and read through the recipe before starting
  • Heat a frying pan and add (i)
    2 tablespoons sunflower oil
  • Add (i) and fry and stir on high heat until softened and browned
    1 aubergine
  • One layer at a time
  • When done put aside for later
  • Add (i) in the same pan on medium heat and stir for 1 minute
    1 tablespoon sunflower oil, 2 cloves garlic, 1 spring onion
  • Return the aubergines to the pan
  • Add (i) and cook gently for 4 minutes, stirring now and then
    2 tablespoons dark soy sauce, 1 tablespoon apple cider vinegar, salt, black pepper
  • Add (i) if needed
    1 tablespoon water
  • Serve

Notes

Optional : you could add a tablespoon of honey to sweeten it up a bit
