Lemons with their bright yellow colour have an oval shape characterised by a distinct bulge on one end, not to be confused with a citron which looks more like a lumpy lemon.

While a lemon might have an inviting and juicy yellow flesh it may not be suitable for solo consumption due to its sourness. However its citrusy aroma and acidity make it a perfect companion to a wide array of ingredients and can be used in both sweet and savoury recipes.

Lemons can be squeezed to make lemon juice, which is commonly used as a garnish or ingredient in cooking, baking, lemonade and cocktails. To get the most juice out of each lemon, make sure they are at room temperature, then with the palm of your hand roll it forth and back a couple of times on a hard surface to help breaking down the fibers of the flesh.

The zest from the lemon, the yellow peel, serves as a superb addition to a variety of culinary preparations and unlike the juice the zest contains essential oils which are not as acidic and with more flavour. When zesting the lemon make sure to only remove the brightly yellow part of the peel and avoid the white part which can be quite bitter.
